Heres one that works, if ones interpretation of the rules allows it :p
Stay on a horse, any quality is good. Have weapon skill 20+
Berserk & Hope for a critical.
6d6*4 = 24d6 ~84 (big & strong knight)
That ought to take down a 60hp 20 armor dragon which is regenerating 10hp/round :p
Ofcourse, berserking is somewhat suicidal vs dragons..
That or multiple lance charges..?

Bad news, a critical only doubles the damage, it doesn't quadruple it. So the big strong knight from your example can do 12d6 at best. Use a great weapon for +1d6 damage and that bumps to 14d6. Lone dragon-slayers typically don't survive unless both lucky -and- blessed.

berseker option doubles.
Critical berserker should therefore quadruple. Or triple, depending on how one interprets.
But as said, its somewhat suicidal to berserker a big monster like a dragon

No, berserker option gives +10 to skill. This gives a massively increased chance of getting a critical, but a critical is still double damage.
The real downfall with berserking, is that the dragon gets to make its attack first, unopposed.

One Knight Vs. one Dragon? Suicide.
Whatever tactics you can imagine, all out attack like that seems to me inviting the beast to kill you.
I would assume a group of knights with someone teasing the beast and fighting defensively at turns... like A tease the dragon, which attacks mostly him, while the others try to make some damage. The dragon turns to C, which has done most of the damage, and C fights defensively while the others attack the monster hoping to do some damage... and so on.

Primo Cavaliere is exactly right.
Remember, even Beowulf was unable to kill a dragon himself. He needed another's help (Wigalf), attacking the dragon in turns, and even so Beowulf was killed and Wigalf took a major wound.

It depends on how stupid the GM plays the dragon to be
If it becomes a tactical combat game, my dragon becomes tactical as well, using its superior movement to surprise the knights by, oh, jumping right onto them, reserving a lashing tail (or two!) for the surprise defense from a flank (not in the rules? My favorite comment is "the dragon didn't read them yet.")
My players always make their wills out before they go to fight a dragon. The local prayer bodies love it when they go to fight dragons, thanks to all the alms they give out before they go.
Get dragons while they are babies or else discover their secret weakness. I published a whole bunch of dragon lair scenarios in "The King's Highway," in Perilous Forest.
Still one of my favorite scenarios

As fine and nasty a collection of scenarios as ever existed. Great way to prune the branches from a player-knight's family tree. :)
