When the knights are at a feast, are they paired with a lady (their wife or some assigned feast partner), or are there tables for the men and tables for the women? I have a big feast coming up at Uther's court, and I have played it both ways, but I am not sure which is correct.

I believe that in Medieval Feasts, they are paired, a man and a woman sharing the same 'plate'. Very good opportunities for flirting and show off your courteous behavior and knowledge of the etiquette and all that good stuff.
Then again, this is Uther, so who knows? It depends how stark a difference you want between Dark Ages Uther's court of rude and uncouth warriors and Arthur's High Medieval court of genteel manners and Romance.

In the Middle and Later Phases, sure

In Early Phase the unmarried women sit together, apart from the men. Ladies to the front, laundresses at the back.
