The Book of the Manor includes a section about the knight's and lady's retinue. Does it supersede the Book of the Entourage or the other way around? Or do they complement each other?

Later books always take precedent. Greg's committed a good chunk of the past four or five decades to Arthurian and medieval scholarship, a commitment that continues even to this day. When he learns something new, it usually goes into the rules, which means the latest information supersedes earlier books. When in doubt look at the date of publication. In this case ENTOURAGE takes precedent over MANOR.

Noting this, ENTOURAGE has little that conflicts with MANOR. Rather, ENTOURAGE gives a lot more detail about what sorts of people are available to have as servants and such for the Knight, while MANOR speaks to the land itself with few comments about the individual servants.
