Am just about to run a session where there knights will be visiting a lords hall, but they will encounter some Saxons who are also guests.

How does hate work in this situation?

I would assume that though the knights want to kill the Saxons the rules of hospitality forbid it, though obviously if they are goaded by the Saxons there could be trouble!!!
