So we have good old Sir DeFalt, and in this generation, he's managed to get a couple of manors (by hook or crook) from two different Lords.

He holds:
£25 from Duke M
and
£22 from Count S.

So, he owes each of them two knights fees, and an additional 5 and 2 foot respectively. Now, assuming the Duke and Count are not at loggerheads themselves and are both loyal vassals of the King/Emperor of Logres/Britain, DeFalt rides to the muster ready to fight the Saxons with his 3 HKs. Am I right in thinking that he and one HK would ride in an eschille of the Duke, and the other two lances would peel off and go hook up with one of the Count's eschilles? Or do all his army fight in the Duke's Conroi?

I believe that this is in the wrong folder

Yep, sounds more like a Game Play question to me! :)

To expand on Greg's answer, you usually had one primary liege lord who had 'first dibs' to your Loyalty. You still owed whatever you promised to the other guy, though: in this case those 2 knights and 6 foot soldiers (2-knight field army + 2 foot soldiers).

Also, the other guy would be within his rights to benefit from your advice and service, too. After all, he did give the lands to you, not to your household knight. So lets say that your primary liege lord is not going to war, this being a local affair, and your 2nd liege lord asks you to join his campaign in person. Saying 'no' to that without an extremely good reason would land you in all sorts of trouble.

Excellent. All is as I thought.

Also, enemies would often seize the lands back when a knight with connections to more than one lord did not show up for battle, even if his men did
